Because they’re converted to energy (glucose) faster than fat carbs are the best fuel to fire up our engines. But choosing the right carbs is the difference between a crash-and-burn and a checkered-flag finish.

Simple and processed carbs, like those in sugar and white bread, break down so quickly that blood sugar temporarily spikes, then plummets to levels below where it started. But the complex carbs found in veggies, fruits and whole grains (like brown rice) come packaged with fiber, which slows digestion to give you a balanced, steady stream of energy.
